One Pot Mexican Rice (Print Version)

# Ingredients:

01 - 1 lb ground beef
02 - 1 small onion, diced
03 - 2 tbsp taco seasoning
04 - 1 tsp garlic powder
05 - 1 cup long-grain white rice, uncooked
06 - 1 1/2 cups beef broth
07 - 15 oz canned corn, drained
08 - 8 oz tomato sauce
09 - 1/2 cup salsa
10 - 1 cup shredded cheese (cheddar or Mexican blend)
11 - Salt and pepper, to taste

# Instructions:

01 - In a large skillet over medium-high heat, cook the ground beef until browned. Season with salt and pepper. Drain excess grease.
02 - Return the skillet to the stove, add the taco seasoning and garlic powder to the beef. Stir well to coat the beef.
03 - Add the uncooked rice, beef broth, corn, tomato sauce, and salsa to the skillet. Stir to combine.
04 - Bring the mixture to a boil, then cover, reduce heat to low, and let simmer for 18-20 minutes, stirring occasionally, until the rice is cooked and tender.
05 - Once the rice is cooked, sprinkle the shredded cheese over the top. Cover and cook until cheese is melted, about 2-3 minutes.
06 - Serve the casserole hot, straight from the skillet.

01 - For extra flavor, add chopped green onions or fresh cilantro on top before serving.
