Greek Meatball Bowl Tzatziki (Print Version)

# Ingredients:

→ Greek Meatballs

01 - 1 lb ground turkey or chicken
02 - 2 cloves garlic, minced
03 - 1/4 cup red onion, finely chopped
04 - 2 tbsp fresh parsley, chopped
05 - 1 tbsp fresh dill, chopped
06 - 1 egg, beaten
07 - 1/4 cup breadcrumbs
08 - 1 tsp dried oregano
09 - Salt and pepper to taste
10 - 2 tbsp olive oil, for cooking

→ Tzatziki Sauce

11 - 1/2 cup cucumber, grated and squeezed to remove water
12 - 1 cup Greek yogurt
13 - 1 clove garlic, minced
14 - 1 tbsp fresh dill, chopped
15 - 1 tbsp lemon juice
16 - Salt to taste

→ Bowl Assembly

17 - 2 cups cooked basmati or jasmine rice
18 - 1 cup cherry tomatoes, halved
19 - 1 cup cucumber slices
20 - 1 cup bell peppers, sliced
21 - 1/4 cup red onion, sliced thinly

# Instructions:

01 - In a large mixing bowl, combine the ground turkey or chicken, garlic, red onion, parsley, dill, egg, breadcrumbs, oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated. Roll into 1-inch meatballs, making about 16-20 meatballs. Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 8-10 minutes, turning occasionally, until golden brown and cooked through. Set aside and keep warm.
02 - Grate the cucumber and squeeze out as much water as possible using a clean kitchen towel. In a bowl, mix the grated cucumber with Greek yogurt, garlic, dill, lemon juice, and a pinch of salt. Stir until smooth and creamy. Refrigerate until ready to serve.
03 - Cook the basmati or jasmine rice according to the package instructions. Fluff with a fork and keep warm.
04 - In each serving bowl, add a base of cooked rice. Arrange the cherry tomatoes, cucumber slices, bell peppers, and red onion on top. Add a generous scoop of tzatziki and place the warm meatballs on top.
05 - Sprinkle with fresh dill or parsley for extra flavor. Optional: Add Kalamata olives or crumbled feta for a Mediterranean touch.

# Notes:

01 - Don't overmix the meatball mixture to keep them tender.
02 - Be sure to squeeze out all the water from the cucumber to avoid a runny tzatziki sauce.
03 - For meal prep, store components separately and assemble just before serving.
04 - For a low-carb option, replace rice with cauliflower rice.
