Cooling Cucumber Dill (Print Version)

# Ingredients:

→ Creamy yogurt mix

01 - 150 grams (¾ cup) full-fat plain or Greek yogurt
02 - 1½ tablespoons fresh lemon juice
03 - 1½ tablespoons high-quality olive oil
04 - ¼ teaspoon finely grated garlic
05 - ½ teaspoon fine sea salt
06 - ⅕ teaspoon freshly ground black pepper

→ Fresh cucumber and dill bowl

07 - 670 grams (1½ lb) cucumbers, cut into thin slices
08 - ¼ cup chopped dill leaves
09 - ½ thinly sliced red onion

# Instructions:

01 - Take a small bowl and combine all the dressing ingredients. Stir well until smooth and set aside.
02 - Chop the cucumbers into slices about 1/8-inch thick, halving them lengthwise first. Slice the onion finely.
03 - In a large bowl, toss together the cucumber, onion, and dill. Pour the dressing over and mix until every piece is coated.
04 - You can eat it right away or keep it in the fridge until you're ready to enjoy.
