# Ingredients:

01 - 1 large head of cauliflower, cut into florets
02 - 2 tablespoons olive oil or melted butter
03 - 1/2 teaspoon salt
04 - 1/2 teaspoon black pepper
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon smoked paprika (optional)
07 - 1/4 cup grated Parmesan cheese
08 - 1/2 cup shredded sharp cheddar cheese
09 - 1 tablespoon chopped fresh parsley (for garnish)

# Instructions:

01 - Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
02 - In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and smoked paprika. Spread them evenly on the baking sheet.
03 - Roast for 20-25 minutes, flipping halfway through, until the edges are golden brown and crispy.
04 - Sprinkle the Parmesan cheese over the cauliflower and roast for another 5 minutes. Remove from the oven, then sprinkle the cheddar cheese on top. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
05 - Remove from the oven and sprinkle with fresh parsley. Serve hot and enjoy.
