Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and smoked paprika. Spread them evenly on the baking sheet.

Roast for 20-25 minutes, flipping halfway through, until the edges are golden brown and crispy.

Sprinkle the Parmesan cheese over the cauliflower and roast for another 5 minutes. Remove from the oven, then sprinkle the cheddar cheese on top. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the oven and sprinkle with fresh parsley. Serve hot and enjoy.
