Cut each chicken breast crosswise so they're even in size. If needed, flatten gently with a tenderizer.

Grab three bowls: Add flour, garlic powder, salt, and pepper to one. The next gets eggs, plus some salt and pepper. Use the last bowl for Panko, Parmesan, garlic powder, salt, and pepper.

Dip each chicken piece into the flour bowl first, then coat in the eggs, and finally press into the breadcrumb mix. Make sure it's well-coated.

Heat up the olive oil, and butter if you'd like, in a large pan over medium to medium-high heat. Cook the chicken for 3 to 5 minutes on each side until it's browned and fully cooked.
