Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, beat butter and sugar until light and fluffy (about 2 minutes). Add egg and cotton candy extract, mixing until combined.

Gradually mix the dry ingredients into the wet ingredients until fully combined.

Divide the dough into two equal portions. Add pink food coloring to one half and blue food coloring to the other. Gently mix each portion until the color is even.

Take a small piece of pink dough and a small piece of blue dough, press them together, and gently roll into a ball. Place on the baking sheet, leaving space between each cookie.

Bake for 10–12 minutes, or until the edges are set but the centers are still soft. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.

While warm, sprinkle with crushed cotton candy or drizzle with melted white chocolate.
