Cheesy Beef Enchilada Tortellini (Print Version)

# Ingredients:

01 - 1 lb ground beef
02 - 1 (19 oz) package cheese tortellini (refrigerated or frozen)
03 - 1 can (10 oz) red enchilada sauce
04 - 1 cup shredded cheddar cheese
05 - 1/2 cup shredded Monterey Jack cheese
06 - 1 small onion, diced
07 - 1 teaspoon cumin
08 - 1/2 teaspoon chili powder
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - Fresh cilantro or green onions for garnish

# Instructions:

01 - Prepare tortellini according to package directions. Drain and set aside.
02 - In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is tender. Drain excess fat.
03 - Stir in cumin, chili powder, garlic powder, salt, and pepper. Add the enchilada sauce and cooked tortellini. Toss gently to combine.
04 - Sprinkle cheddar and Monterey Jack cheese over the top. Cover the skillet with a lid and let it cook for 3-5 minutes until the cheese melts.
05 - Top with chopped cilantro or green onions. Serve hot!
