Spicy Sausage Pasta (Print Version)

# Ingredients:

01 - A bit over 10 ounces (300 grams) of pasta.
02 - One tablespoon of olive oil.
03 - A pound (450 grams) of beef or pork sausage.
04 - One big shallot, chopped up finely.
05 - A large pointed red pepper, sliced thin.
06 - A couple of large garlic cloves, minced.
07 - Half a tablespoon of dried oregano.
08 - Three tablespoons of Cajun spice mix.
09 - Two tablespoons of tomato paste.
10 - Half a cup (100 grams) of reduced-fat cream cheese.
11 - About a third of a cup (30 grams) of grated Parmesan.
12 - Two or three tablespoons of fresh parsley, chopped.
13 - Salt and some freshly cracked black pepper for seasoning.

# Instructions:

01 - Cook pasta in salted boiling water following package directions. Save 2 cups of the water before draining.
02 - Break up the sausage as it cooks for 4–5 minutes. Add the shallot and red pepper and cook until softened.
03 - Throw in the garlic, oregano, and Cajun seasoning. Let them cook for about a minute.
04 - Mix in the tomato paste along with 1 cup of the reserved pasta water. Stir in the cream cheese until it melts smoothly.
05 - Combine the pasta with the sauce, Parmesan, and parsley. Season it and serve right away.

# Notes:

01 - Save a couple of cups of the starchy water from the pasta for your sauce.
02 - Can make this with either pork or beef sausage.
03 - Add more or less Cajun seasoning depending on how spicy you want it.
