01 - 1 can (15 oz) of chickpeas
02 - 1/2 cup tahini
03 - 1/4 cup fresh lemon juice
04 - 2 garlic cloves
05 - 1/2 tsp kosher salt
06 - 1/4 tsp ground cumin
07 - 1/3 cup ice-cold water

# Instructions:

01 - Thoroughly rinse and drain the chickpeas to remove the liquid from the can, which can cause digestive discomfort.
02 - In a blender, combine the chickpeas, tahini, lemon juice, garlic, salt, and cumin. Start blending at low speed until everything is well mixed. While blending, slowly add the ice-cold water to the mixture. Turn to medium-high speed and blend for about 3 minutes until the texture is light, smooth, and creamy.
03 - Spread the hummus onto a serving plate, creating swirls with the back of a spoon. Drizzle some olive oil on top and garnish with a sprinkle of cumin, cayenne pepper, and chopped cilantro for added flavor.
04 - Transfer the hummus to an airtight container and keep it in the refrigerator for up to 4 days.

# Notes:

01 - For an even smoother texture, you can cook the canned chickpeas further. Add them to a pot of boiling water with a pinch of baking soda and simmer for 15-20 minutes until very soft.
02 - If raw garlic is too sharp for your taste, dice it and let it soak in lemon juice for 10 minutes. Alternatively, roast the garlic until creamy for a milder flavor.
