Place a tortilla on a flat surface, spoon 2-3 tablespoons of the beef mixture onto the center, then sprinkle with a generous amount of shredded cheese. Roll the tortilla tightly around the filling and place seam side down on the prepared baking sheet. Repeat with remaining tortillas.

Lightly spray the taquitos with cooking spray or brush with a small amount of olive oil to help them crisp up during baking.
