Chop the baguette into cubes, around 1/2-inch. Leave these uncovered for a day to dry, or pop in a 200°F oven for 90-120 minutes to speed it up.

Toss cut-up apples with sugar, spices, and some flour. Cook gently in water and butter until they're soft. Drain, keeping the liquid for later.

Combine eggs, milk, melted butter, vanilla, brown sugar, and spices in a big mixing bowl. Whisk until smooth.

Grease a 9x13 dish. Add the bread cubes in with the apple mix spread evenly on top. Pour the custard on, pressing down the bread so it soaks up the liquid.

Cook uncovered at 375°F for 30 mins, then cover with foil and bake 15-20 mins more. Drizzle the saved apple juices on once done.

Let it sit for 10 minutes before digging in. Goes great warm with a scoop of vanilla ice cream if you'd like.
