Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add the chopped onion to the same skillet and cook for 3-4 minutes, or until softened and translucent.

Stir in the pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes. Simmer for 2-3 minutes until the flavors combine.

Return the cooked chicken to the skillet and toss it in the sauce until fully coated. Simmer for another 2-3 minutes to let the flavors meld. Serve hot over the cooked rice.
