01 - 1 pound boneless, skinless chicken breasts, thinly sliced
02 - 1 tablespoon olive oil
03 - 1/2 onion, chopped
04 - 1 can (15 oz) pineapple chunks, drained
05 - 1/4 cup soy sauce
06 - 1/4 cup honey
07 - 1/4 cup rice vinegar
08 - 1 clove garlic, minced
09 - 1/4 teaspoon red pepper flakes

10 - 2 cups cooked rice

# Instructions:

01 - Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
02 - Add the chopped onion to the same skillet and cook for 3-4 minutes, or until softened and translucent.
03 - Stir in the pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes. Simmer for 2-3 minutes until the flavors combine.
04 - Return the cooked chicken to the skillet and toss it in the sauce until fully coated. Simmer for another 2-3 minutes to let the flavors meld. Serve hot over the cooked rice.
