01 - 450g flank steak or sirloin, thinly sliced against the grain
02 - 1 tablespoon olive oil
03 - 1 onion, thinly sliced
04 - 1 bell pepper, thinly sliced (optional)

06 - 1 teaspoon smoked paprika
07 - 1 teaspoon ground cumin
08 - 1 teaspoon dried oregano
09 - Salt and pepper, to taste
10 - 1 cup shredded cheddar cheese (or mozzarella, provolone, or gouda)
11 - ½ cup beef broth or water
12 - Fresh parsley or cilantro for garnish (optional)

# Instructions:

01 - Slice the steak thinly against the grain and season with salt, pepper, smoked paprika, cumin, and oregano. Toss to coat evenly. Slice the onion and bell pepper thinly and mince the garlic. Set aside.
02 - Heat a large skillet over medium-high heat. Add olive oil and heat for 1-2 minutes. Cook the seasoned steak slices in a single layer for 2-3 minutes on each side until browned. Do not overcrowd the pan; cook in batches if necessary. Remove the steak and set aside, leaving the juices in the pan.
03 - In the same skillet, sauté the sliced onion and bell pepper for 4-5 minutes until softened and lightly caramelized. Add minced garlic and cook for 1-2 minutes until fragrant.
04 - Return the cooked steak to the skillet with the vegetables. Stir to combine. Pour in the beef broth (or water) to deglaze the pan and simmer for 2-3 minutes. Sprinkle the shredded cheese evenly over the mixture, cover with a lid, and let melt for 2-3 minutes until bubbly.
05 - Remove the skillet from heat and garnish with fresh parsley or cilantro. Serve with rice, tortilla chips, or a fresh salad.
