Cheesy Chicken Spinach (Print Version)

# Ingredients:

01 - 4 boneless chicken breasts that weigh about 2 lbs total.
02 - 4 oz of fresh spinach leaves.
03 - 4 oz of cream cheese, softened.
04 - 2 oz crumbled feta cheese.
05 - 2 oz of mozzarella cheese, shredded.
06 - 2 tbsp olive oil.
07 - 2 tsp of paprika.
08 - 1 tsp of ground cumin.
09 - 1 tsp of salt.
10 - 1/2 tsp of chili powder.

# Instructions:

01 - Combine cumin, paprika, chili powder, and salt in a small dish. Set aside.
02 - Dice the spinach finely, then mix it with the cream cheese, feta, and mozzarella until smooth and thick.
03 - Make a slit on the side of each chicken breast using a sharp blade to form a pocket.
04 - Take the spinach mixture, divide it equally, and stuff it inside the chicken pockets. Use toothpicks to hold the openings closed.
05 - Brush the seasoned spice blend over the chicken, coat with olive oil, and bake at 400°F for 25–30 minutes.

# Notes:

01 - Keep leftovers in the fridge and finish them within 4 days.
02 - Add some moisture like a splash of water when reheating to avoid making the chicken dry.
03 - Ensure the stuffing mix stays thick so it doesn’t spill out of the chicken during cooking.
