Southwestern Egg Rolls Delight (Print Version)

# Ingredients:

→ Filling

01 - 1 ½ cups cooked chicken breast, shredded or diced
02 - 1 teaspoon cumin
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1 teaspoon paprika or smoked paprika
06 - 1 teaspoon chili powder
07 - ½ teaspoon salt, or to taste
08 - 2 cups shredded Pepper Jack cheese or Monterey Jack cheese
09 - 1 cup fresh spinach
10 - ½ cup corn, thawed if frozen or drained if canned
11 - ½ cup canned black beans, drained and rinsed
12 - ⅓ cup red bell peppers, diced small
13 - 2 teaspoons lime juice

→ Wrappers

14 - 12 taco-size flour tortillas (4 to 5 inches diameter) or egg roll wrappers

→ Avocado Ranch Dipping Sauce

15 - ½ cup mashed avocado (from about half a large ripe avocado)
16 - ½ cup ranch salad dressing
17 - 3 tablespoons fresh cilantro, finely minced
18 - 2 ½ tablespoons sour cream or plain Greek yogurt
19 - 1 teaspoon lime juice
20 - ½ teaspoon salt, or to taste
21 - ¼ teaspoon garlic powder
22 - ¼ teaspoon onion powder
23 - ¼ teaspoon freshly ground black pepper

# Instructions:

01 - In a large bowl, combine cooked chicken, spices, and salt. Mix well. Add shredded cheese, spinach, corn, black beans, bell peppers, and lime juice. Stir until evenly combined.
02 - If using tortillas, place them on a microwave-safe plate and heat on high for 30 seconds to soften and make pliable.
03 - Place ¼ cup of filling in the center of each wrapper. Fold the outside edges toward the middle and roll up tightly. Seal the edges with water. Repeat for remaining wrappers.
04 - In a medium bowl, mash avocado. Add ranch dressing, cilantro, sour cream, lime juice, salt, garlic powder, onion powder, and black pepper. Stir well or blend for a smoother texture.
05 - Heat vegetable or canola oil in a skillet to 375°F. Add 4 rolls to the oil and fry for 1 minute per side until golden brown. Repeat in batches. Place cooked rolls on paper towels to drain.
06 - Preheat air fryer to 375°F. Spray egg rolls with nonstick cooking spray and air fry for 5 minutes. Flip, spray again, and air fry for another 5 minutes, until golden brown.
07 - Preheat oven to 475°F. Place egg rolls on a nonstick baking sheet sprayed with cooking spray. Spray the rolls as well. Bake for 10 to 15 minutes, flip, spray again, and bake for another 10 to 15 minutes until golden brown.

# Notes:

01 - Leftover egg rolls can be stored airtight in the fridge for up to 5 days or in the freezer for up to 4 months. Reheat in an air fryer for best results.
02 - Extra dipping sauce can be refrigerated for 3 to 4 days but may oxidize and darken over time.
