Smothered Baked Chicken Burritos (Print Version)

# Ingredients:

→ Baked Chicken Burritos

01 - 1 Recipe Slow Cooker Mexican Chicken
02 - 6 burrito-size tortillas, raw or undercooked preferred
03 - 1 cup shredded sharp cheddar cheese
04 - Olive oil or nonstick cooking spray

→ Cheesy Green Chili Sour Cream Sauce

05 - 2 tablespoons olive oil
06 - 1 tablespoon butter
07 - 3 tablespoons flour
08 - 2 cups low sodium chicken broth, warmed
09 - 1/2 teaspoon cumin
10 - 1/4 to 1/2 teaspoon salt
11 - 1/4 teaspoon pepper
12 - 1/2 cup sour cream
13 - 1/2 of a 4 oz. can mild chopped green chilies, adjusted to taste
14 - 1/2 cup shredded sharp cheddar cheese
15 - Hot sauce to taste, optional

→ Optional Toppings

16 - Tomatoes
17 - Avocados or guacamole
18 - Cilantro
19 - Salsa
20 - Tortilla strips or chips

# Instructions:

01 - Follow the Slow Cooker Mexican Chicken recipe instructions. Drain any excess liquid from the chicken once done.
02 - Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a baking rack on top.
03 - Lay out the tortillas and distribute a heaping ½ cup of the Mexican Chicken filling onto each. Sprinkle your desired amount of cheese on top of the filling, then roll up each tortilla burrito-style. Place the burritos seam-side down on the baking rack. Lightly brush each burrito with olive oil or spray with nonstick cooking spray.
04 - Bake in the preheated oven for 18-20 minutes or until the burritos turn golden. For added crispiness, broil each side until golden brown to your liking.
05 - While the burritos are baking, prepare the Cheesy Green Chili Sour Cream Sauce. In a medium saucepan, heat the olive oil and butter over medium heat. Whisk in the flour and cook for 3 minutes, stirring constantly. Reduce the heat to low, then gradually whisk in the warmed chicken broth. Add the cumin, salt, and pepper. Continue to stir until the sauce thickens, about 2-3 minutes. Remove from heat, then stir in the green chilies and cheese until melted. Finally, blend in the sour cream and add hot sauce if desired.
06 - Drizzle the Cheesy Green Chili Sour Cream Sauce over the baked burritos and add any optional toppings you prefer. Serve with a side of salad or rice for a complete meal.
