→ Cheesecake Layer

05 - 16 ounces cream cheese, softened
06 - 1 ⅓ cups powdered sugar
07 - 1 tablespoon cornstarch
08 - ⅔ cup sour cream
09 - 2 large eggs
10 - 1 ⅓ cups rough chopped Oreos, divided
11 - Caramel sauce, optional garnish

# Instructions:

01 - Preheat the oven to 350°F. Line a 9x13-inch baking pan with parchment paper or spray with non-stick cooking spray.
02 - In a large mixing bowl, beat together the chocolate chip cookie mix, softened butter, and egg with a hand mixer until well combined.
03 - Press the cookie dough into the bottom of the prepared pan in an even layer. Place the Oreos evenly over the top of the cookie dough.
04 - Using a hand mixer, beat together the cream cheese, powdered sugar, and cornstarch in a large mixing bowl until light and fluffy. Mix in the sour cream until smooth. Add the eggs, one at a time, mixing until fully incorporated after each addition. Fold in ⅔ cup of chopped Oreos.
05 - Spread the cheesecake mixture evenly over the Oreos in the pan. Sprinkle the remaining ⅔ cup of chopped Oreos over the top.
06 - Place in the oven and bake for 35–40 minutes or until the cheesecake layer is just set and reaches around 150°F.
07 - Remove the bars from the oven and place on a wire rack to cool to room temperature. Cover the pan with plastic wrap and refrigerate for at least 3 hours or until fully chilled.
08 - When ready to serve, remove the bars from the pan, cut into squares, and serve drizzled with caramel sauce, if desired.
