Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides, about 2–3 minutes per side. Transfer to the slow cooker.

In a small bowl, mix melted butter, minced garlic, thyme, rosemary, smoked paprika, onion powder, salt, and pepper.

Place the halved baby potatoes in the bottom of the slow cooker. Drizzle with half of the garlic butter sauce. Add the seared beef bites on top of the potatoes and drizzle with the remaining garlic butter sauce. Pour the beef broth over everything.

Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and the potatoes are cooked through.

Stir gently to coat the potatoes and beef in the sauce. Sprinkle with chopped fresh parsley before serving. Serve warm.
