Slow Cooker Corned Beef Dish (Print Version)

# Ingredients:

01 - 3 to 4 lb corned beef with seasoning
02 - 4 cups low sodium beef broth
03 - 2 bay leaves
04 - 1 lb baby carrots
05 - 2 lbs baby potatoes, red and gold
06 - ½ head cabbage, chopped

# Instructions:

01 - Remove the corned beef from packaging and place in the bottom of the slow cooker. Cover with beef broth or water for a milder flavor, and top with 2 bay leaves. Cover and cook on LOW heat for 5 hours.
02 - Add in potatoes and carrots around the brisket, and continue cooking on LOW heat for an additional 3 hours.
03 - Add the chopped cabbage on top, cover, and continue cooking for 30 more minutes on LOW heat.
04 - Use tongs and a slotted spoon to remove the cabbage, carrots, and potatoes from the slow cooker. Remove the corned beef and let it rest for 5 minutes before slicing. Enjoy!

# Notes:

01 - Sodium levels are high because corned beef is brined in a salt mixture. To reduce sodium, rinse the beef prior to cooking and use water instead of beef broth.
