Slow Cooker Apple Cider Beef (Print Version)

# Ingredients:

01 - 1½ lbs beef stew meat
02 - 1 cup sliced carrots
03 - 1 cup sliced celery
04 - 1 cup frozen green peas
05 - 1½ cups Yukon Gold potatoes, cut into large bite-sized chunks
06 - 1 packet onion soup seasoning mix
07 - 1 packet brown gravy mix
08 - 1 can (8 oz) tomato sauce
09 - 1 can (14.5 oz) beef broth
10 - 1½ cups apple cider
11 - 3 tablespoons cornstarch
12 - 1/3 cup cold water

# Instructions:

01 - Combine the beef stew meat, carrots, celery, peas, potatoes, onion soup seasoning mix, brown gravy mix, tomato sauce, beef broth, and apple cider into the slow cooker.
02 - Cover and set the slow cooker to LOW heat. Cook for 8 hours.
03 - In a small bowl, mix the cornstarch and cold water until smooth. Pour the mixture into the stew, stir to combine, and cook on HIGH for an additional 15 minutes to thicken the gravy.
04 - Add additional salt and pepper as desired. Serve and enjoy.

# Notes:

01 - Cut the potatoes and carrots into large, bite-sized chunks to maintain their texture during cooking. You can peel the bad parts while leaving some skin on for better flavor.
02 - Using full-salt beef broth helps season the ingredients and enhances their flavor during the longer cooking period.
