Preheat the oven to 375 degrees Fahrenheit.

In a large mixing bowl, mix together crushed Oreos and melted butter using a fork until the mixture resembles wet sand.

Pour the Oreo mixture into the bottom of a 9x13 baking dish. Press the crust firmly into all corners and sides of the dish using your palm until it is flat and even.

In a large mixing bowl, use an electric hand or stand mixer to blend cream cheese, powdered sugar, and 1 tub of whipped topping until fully smooth.

Spread the cream cheese mixture evenly over the cooled crust, smoothing it level with a rubber spatula.

In a separate mixing bowl, blend the pudding mixes with cold milk on low-medium speed until combined. Add the remaining tub of whipped topping, mint extract, and 2-3 inches of gel food coloring. Blend until smooth and evenly green.

Spread the green pudding mixture evenly over the cream cheese layer, smoothing the top flat.

Refrigerate the dish for 4-6 hours or overnight until fully set.

Before serving, garnish with Oreo crumbs. Slice into portions and top each piece with whipped topping, maraschino cherries, and green sprinkles as desired.
