Roasted Pepper Spinach Chicken (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - 1/2 cup roasted red peppers, chopped
03 - 1 cup fresh spinach, chopped
04 - 1 cup shredded mozzarella cheese
05 - 1 teaspoon garlic powder
06 - 1 teaspoon paprika
07 - Salt to taste
08 - Pepper to taste
09 - 2 tablespoons olive oil

# Instructions:

01 - Preheat oven to 375°F (190°C).
02 - In a bowl, mix roasted red peppers, spinach, mozzarella, garlic powder, paprika, salt, and pepper until well combined.
03 - Slice chicken breasts horizontally to create pockets. Stuff each pocket generously with the filling.
04 - Heat olive oil in an oven-safe skillet over medium heat. Sear stuffed chicken for 3–4 minutes per side until golden brown.
05 - Transfer the skillet to the oven and bake for 25–30 minutes until internal temperature reaches 165°F (75°C).
06 - Let rest for 5 minutes before slicing.
