Simple Miso (Print Version)

# Ingredients:

01 - 4 cups of veggie stock.
02 - 1 sheet of nori (seaweed), chopped into small squares.
03 - 3 to 4 tablespoons of miso paste, choose white or yellow.
04 - Half a cup of diced green onion.
05 - Half a cup of leafy greens, like chopped Swiss chard.
06 - Quarter cup of tofu, firm and cut into cubes.

# Instructions:

01 - Heat the veggie stock in a medium pot until it gently simmers.
02 - In a small bowl, stir the miso with hot water until smooth, making sure it doesn’t form lumps.
03 - Drop the chard, green onion, and tofu into the warmed stock and let it cook for 5 minutes. Stir in the nori at the end.
04 - Take the pot off the stove and mix in the miso. Give it a quick taste to tweak the seasoning, then serve it hot.

# Notes:

01 - Tastes best when eaten fresh.
02 - For authenticity, swap the broth with dashi.
03 - Silky-textured tofu is a more traditional option than firm tofu.
