Line a baking sheet with wax paper or a silicone baking mat.

In a small bowl, combine Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract. Stir until smooth.

Using a scoop, dollop half of the yogurt mixture into 4-6 mounds on the lined baking sheet. Press a popsicle stick into each mound, then top with the remaining yogurt mixture and flatten slightly with a spatula.

Scatter roasted and salted peanuts evenly onto each mound. Freeze for at least 2 hours or until solid.

Place chocolate chips or chopped chocolate and coconut oil in a microwave-safe bowl. Microwave at 50% power for 30 seconds, stir, and repeat in 15-20 second intervals until melted.

Remove the frozen yogurt pops from the freezer and dip each one into the melted chocolate. Place the pops back on the baking sheet. Enjoy immediately or freeze for later use. Thaw for 5-10 minutes before serving if frozen.
