One Pot Pizza Pasta (Print Version)

# Ingredients:

01 - ½ lb sweet or spicy Italian sausage, casings removed
02 - ½ medium onion, diced
03 - 1 bell pepper, diced
04 - 8 oz mushrooms, any kind, sliced
05 - 4 oz tomato paste (approximately ⅓ cup)
06 - ½ teaspoon red pepper flakes (optional)
07 - 1 ½ teaspoons oregano
08 - 2 garlic cloves, minced
09 - ½ lb short pasta, such as rotini
10 - 2 ½ cups chicken broth
11 - 1 ½ cups mozzarella cheese, shredded
12 - Parmesan cheese for garnish (optional)

# Instructions:

01 - In a Dutch oven, add sausage and cook over medium heat, breaking it into bite-sized pieces until browned.
02 - Add diced onion, bell pepper, and mushrooms to the pot. Cook until the vegetables soften, about 5 minutes.
03 - Add tomato paste, red pepper flakes, oregano, and garlic. Stir until the tomato paste coats the meat and vegetables. Cook for 1 minute until fragrant.
04 - Mix in pasta and chicken broth. Turn the heat to high and bring to a boil, then lower heat to medium-low and cover. Cook for 14-16 minutes, occasionally stirring, until pasta is al dente and most liquid is absorbed. If all liquid is absorbed, add 1 tablespoon of water or broth to create a creamy sauce.
05 - Remove from heat and stir in mozzarella cheese. Adjust seasoning with salt to taste. Optionally, top with red pepper flakes and Parmesan cheese before serving.
