Mexican Ground Beef Potato Skillet (Print Version)

# Ingredients:

01 - 2 tablespoons avocado oil
02 - 1 pound potatoes, cut into 1/2 inch cubes
03 - 1 pound lean ground beef
04 - 1/2 cup diced yellow onion
05 - 1 red bell pepper, diced
06 - Kosher salt and freshly ground black pepper, to taste (approximately 1-1 1/2 teaspoons kosher salt)
07 - 4 ounces diced green chiles
08 - 2 1/2 teaspoons chili powder
09 - 1 teaspoon ground cumin
10 - 1/2 teaspoon smoked paprika
11 - 1/4 cup chopped cilantro
12 - 1/2 cup shredded cheese

# Instructions:

01 - Heat the avocado oil in a large skillet over medium-high heat. When the oil is hot, swirl it to coat the bottom of the skillet and reduce the heat to medium. Add the potatoes and cook them, stirring often, for about 6 minutes or until turning golden and starting to become tender (still too firm to eat).
02 - Push the potatoes to one side of the skillet and add the ground beef. Crumble the beef, then add the diced onion and red bell pepper. Season with salt and black pepper, and cook, breaking the beef apart as it cooks.
03 - Add the green chiles, chili powder, cumin, smoked paprika, and cilantro. Stir everything together and cook until the potatoes are tender and the beef is fully cooked through, about 6-8 minutes.
04 - Taste for seasoning and add additional salt if needed. Top with shredded cheese and cook for another minute until it melts. Garnish with cilantro if desired and serve hot.
