Rustic Mexican Casserole (Print Version)

# Ingredients:

01 - 1/2 pound hot Italian sausage.
02 - 1 pound 85/15 ground beef.
03 - 2 tablespoons smashed garlic.
04 - 10 ounces drained Rotel diced tomatoes.
05 - 3 tablespoons olive oil.
06 - 1 jalapeño, chopped super fine.
07 - 1 cup chopped scallions.
08 - 1/4 cup fresh cilantro.
09 - 2 1/2 cups shredded cheese blend.
10 - 2 1/2 cups diced white onion.
11 - 2 cups diced green bell pepper.
12 - Spices (cumin, chili powder, oregano, coriander, salt, pepper).
13 - 1 cup thick Greek yogurt.
14 - 3 large eggs.
15 - 1/2 cup all-purpose flour.
16 - 2 teaspoons baking powder.

# Instructions:

01 - Line your springform pan with parchment and grease it generously.
02 - Brown the sausage and beef together, then drain any leftover grease.
03 - Heat up the veggies with the spices until they’re soft but still hold their shape.
04 - Whisk together eggs, Greek yogurt, flour, and baking powder until smooth.
05 - Layer the sauce mixture, meat, and shredded cheese, then end with the herbed cheese blend on top.
06 - Bake at 350°F for 45 minutes, then broil briefly for a golden finish.
