Mediterranean Chicken with Orzo (Print Version)

01 - 3–4 boneless, skinless chicken breasts
02 - 1 cup orzo pasta
03 - 4 cloves fresh garlic, minced
04 - 1 cup cherry tomatoes, halved
05 - 2 handfuls baby spinach
06 - Juice of 1 lemon
07 - 1 tsp dried oregano
08 - 2 tbsp extra virgin olive oil
09 - Salt and pepper to taste

# Instructions:

01 - Cook orzo according to package instructions. Chop garlic and halve cherry tomatoes.
02 - Heat olive oil in a skillet over medium heat. Cook seasoned chicken for 6-7 minutes on each side until golden brown.
03 - Stir in minced garlic and halved tomatoes; sauté until fragrant.
04 - Add cooked orzo and fresh spinach to the skillet, mixing until spinach wilts.
05 - Squeeze lemon juice and sprinkle oregano over the mixture. Stir briefly, then serve hot.
