Mango Hot Wings (Print Version)

# Ingredients:

→ Mango Habanero Sauce

01 - 1 big ripe mango, skin peeled off, seed removed, and chopped into chunks
02 - Three medium-sized habanero chilies
03 - Three garlic cloves, coarsely diced
04 - 2 tablespoons of plain white vinegar
05 - Juice from 3 fresh limes
06 - 3 tablespoons of pure maple syrup
07 - Half a teaspoon of paprika powder
08 - A teaspoon of salt

→ Chicken Wings

09 - 10 bone-in chicken wings, separated into flats and drumettes
10 - 1 tablespoon of baking powder (make sure it’s aluminum-free)
11 - Half a teaspoon of garlic powder
12 - Half a teaspoon of paprika
13 - A quarter teaspoon of freshly cracked pepper
14 - Half a teaspoon of salt

# Instructions:

01 - Throw the mango pieces, habaneros, garlic, vinegar, lime juice, maple syrup, paprika, and salt into a food processor. Blend until it’s completely smooth.
02 - Mix together the baking powder with all the seasonings in a bowl. Make sure the wings are dry, then toss them in the mixture until they’re all coated.
03 - Set your oven to 425°F. Cover a baking sheet with foil, place a wire rack on top, and give it a spray with non-stick cooking spray.
04 - Arrange wings on the rack with the skin side up. Bake for 20 minutes, flip them over, and bake another 10 minutes. Keep baking and flipping until they hit 160°F inside.
05 - Let the wings cool for about 5 minutes. Toss them in a bowl with a third of a cup of the sauce. Serve alongside the extra sauce.

# Notes:

01 - If you want it spicier, keep the seeds from 1 to 3 habaneros.
02 - You can make the sauce ahead of time and keep it in the fridge.
03 - If the wings were frozen, make sure they’re fully thawed before starting.
