Instant Pot Pot Roast Meal (Print Version)

# Ingredients:

01 - 3 lb chuck pot roast, cut into 6 equal-sized pieces (about 3-inch chunks)
02 - ½ tsp salt
03 - ¼ tsp black pepper
04 - 1 tbsp olive oil
05 - 1 medium yellow onion, chopped
06 - 2 tsp garlic, minced
07 - 1 tbsp tomato paste
08 - ¼ cup red wine or beef stock
09 - 1 ½ cups beef stock
10 - 2 tbsp Worcestershire sauce
11 - 1 ½ lb baby red and gold potatoes
12 - 5 large carrots, peeled and cut into 2-inch segments
13 - 3 sprigs fresh rosemary
14 - 3 sprigs fresh thyme
15 - 2 whole bay leaves
16 - 2 tbsp butter
17 - ¼ cup all-purpose flour

# Instructions:

01 - Season chuck roast pieces with salt and pepper on all sides. Turn the Instant Pot to SAUTÉ mode and add olive oil. Once hot, sear the beef on all sides, about 3 to 4 minutes per side. Transfer beef to a plate.
02 - Add onion to the pot and sauté for about 3 minutes. Add garlic and tomato paste, stirring until fragrant, about 30 seconds.
03 - Pour in red wine and stir, scraping the bottom of the pot to deglaze and remove any browned bits.
04 - Pour in beef stock, Worcestershire sauce, potatoes, and carrots. Top with beef chunks, rosemary, thyme, and bay leaves.
05 - Close the lid and ensure the valve is in the SEALED position. Cook on HIGH pressure for 35 minutes. Let the pressure naturally release for 10 minutes, then turn the valve to release remaining pressure.
06 - Discard bay leaves, rosemary, and thyme. Remove the beef, potatoes, and carrots with a slotted spoon, placing them on a plate. Loosely cover with foil to keep warm. Strain liquid through a fine mesh strainer, reserving 2 cups of liquid and skimming off any fat.
07 - Turn the Instant Pot to SAUTÉ mode. Melt butter in the pot, whisk in flour, and cook for about 2 minutes. Gradually whisk in the reserved liquid and cook until desired gravy thickness is reached. Season with salt and pepper to taste.
08 - Plate the beef, potatoes, carrots, and pour gravy over the top. Enjoy your meal.
