Grilled Lemon Chicken (Print Version)

# Ingredients:

01 - 6 boneless, skinless chicken breasts (6 ounces each)
02 - 1/4 cup olive oil
03 - 1/4 cup lemon juice, plus zest from the lemons
04 - 2 teaspoons dried oregano
05 - 4 garlic cloves, pressed
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon black pepper
08 - Fresh parsley or cilantro, for serving
09 - Lemon wedges, for serving

# Instructions:

01 - Pat chicken dry and pound to an even thickness if necessary. In a bowl or resealable freezer bag, combine olive oil, lemon juice, lemon zest, oregano, garlic, salt, and pepper. Add chicken and toss to coat evenly. Marinate for at least 30 minutes.
02 - Preheat the grill or grill pan to medium-high heat. Place chicken on the grill and cook for 5-7 minutes. Flip using tongs and cook for an additional 5-7 minutes until juices run clear and internal temperature reaches 75°C (165°F). Discard excess marinade.
03 - Remove chicken from the grill and garnish with parsley or cilantro. Serve with lemon wedges and vegetables, if desired.
