Grilled Cowboy Butter Chicken (Print Version)

# Ingredients:

→ Chicken Skewers

01 - 1.5 pounds boneless skinless chicken thighs, cut into bite-sized pieces
02 - 1 tablespoon olive oil
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder
05 - 0.5 teaspoon onion powder
06 - Salt and pepper to taste

→ Cowboy Butter Sauce

07 - 0.5 cup unsalted butter, melted
08 - 2 cloves garlic, minced
09 - 1 tablespoon Dijon mustard
10 - 1 tablespoon lemon juice
11 - 1 tablespoon chopped parsley
12 - 0.5 teaspoon red pepper flakes
13 - 0.5 teaspoon smoked paprika
14 - Salt and black pepper to taste

# Instructions:

01 - In a large bowl, toss chicken pieces with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Let marinate while you prepare the butter sauce.
02 - In a small bowl, combine melted butter, garlic, Dijon mustard, lemon juice, parsley, red pepper flakes, smoked paprika, salt, and pepper. Stir well.
03 - Thread chicken pieces onto skewers.
04 - Preheat grill or grill pan to medium-high heat.
05 - Grill skewers for 5–6 minutes on each side, basting with the cowboy butter sauce as they cook. Continue grilling until chicken is fully cooked and slightly charred.
06 - Serve hot with extra cowboy butter on the side.
