In a large bowl, toss chicken pieces with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Let marinate while you prepare the butter sauce.

In a small bowl, combine melted butter, garlic, Dijon mustard, lemon juice, parsley, red pepper flakes, smoked paprika, salt, and pepper. Stir well.

Thread chicken pieces onto skewers.

Preheat grill or grill pan to medium-high heat.

Grill skewers for 5–6 minutes on each side, basting with the cowboy butter sauce as they cook. Continue grilling until chicken is fully cooked and slightly charred.
