Heat oven to 350°F (180°C) and line a 20 cm (7.9 inches) loaf pan with parchment paper or grease it with oil.

In a large bowl, mash the bananas. Combine with Greek yogurt, egg, maple syrup, ground cinnamon, vanilla extract, and a pinch of salt. Stir until smooth.

Add oat flour, almond flour (or more oat flour), and baking powder into the wet mixture. Stir until completely mixed, adding chocolate chips if desired.

If the batter is too liquid, add a little more flour. If it is too dry, add a splash of milk. Adjustments depend on the size of the bananas used.

Transfer the batter to the prepared pan and bake for 30–35 minutes. The banana bread is ready when a toothpick inserted into the center comes out clean.
