Garlic Butter Steak Bites (Print Version)

# Ingredients:

01 - ¼ cup ghee or butter, divided
02 - 1 tablespoon olive oil
03 - 1 lb yukon gold potatoes, cut into ½ inch cubes
04 - 3 garlic cloves, minced
05 - 1 teaspoon dried thyme
06 - ½ teaspoon dried oregano
07 - ½ teaspoon sea salt, plus more to taste
08 - ¼ teaspoon ground black pepper, plus more to taste
09 - 1 ¼ lb sirloin steak, cut into ½ inch cubes

# Instructions:

01 - Heat a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of the ghee to the pan.
02 - Once the ghee is melted, add the potatoes and sprinkle the garlic, thyme, oregano, salt, and pepper over the potatoes in the pan. Cook for 2-3 minutes before stirring the potatoes. Stir frequently, about every 1-2 minutes, to avoid sticking. Continue cooking until the potatoes are golden brown and fork tender, about 8-10 minutes. Remove the potatoes and any browned bits from the pan and set aside.
03 - Increase heat to medium-high and add the remaining two tablespoons of ghee to the pan. Once melted, add the steak pieces and season with a dash of salt and pepper. Cook for at least 2 minutes without stirring to achieve a good sear. Stir and continue cooking until the steak bites are golden brown, about 1-2 additional minutes.
04 - Add the potatoes back to the pan and stir to combine. Season with more salt and pepper to taste. Optionally, garnish with freshly chopped parsley. Serve immediately and enjoy!

# Notes:

01 - You can substitute other small potato varieties, such as yellow, red, or fingerling potatoes.
02 - Cut the potatoes into small, even pieces to ensure they cook evenly and quickly.
03 - Let the steak sear properly before stirring for the best flavor and texture.
