Fruit Pizza with Cream Cheese (Print Version)

# Ingredients:

→ Brown Sugar Cookie Crust

01 - 1 1/2 cups all-purpose flour (plus extra for rolling)
02 - 1 teaspoon baking powder
03 - 1/4 teaspoon salt
04 - 1/2 cup unsalted butter, softened
05 - 1/2 cup packed light brown sugar
06 - 1 egg
07 - 1 teaspoon vanilla extract
08 - 1/2 teaspoon almond extract

→ Cream Cheese Frosting

09 - 1 (8 ounce) package low-fat cream cheese
10 - 2–3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
11 - 1 teaspoon vanilla extract
12 - pinch of fine sea salt

→ Toppings

13 - fresh strawberries
14 - blueberries, raspberries, blackberries, or any other fruit
15 - optional fresh honey, for drizzling

# Instructions:

01 - Heat oven to 350°F. Grease either a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
02 - In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
03 - In a large mixing bowl, beat the butter and sugar together on medium speed until light and fluffy, about 2 minutes. Add the egg, vanilla, and almond extract. Beat on medium speed until completely combined, scraping down the sides partway through if needed.
04 - Add the dry ingredients to the wet mixture and beat on low speed until just combined. Avoid over-mixing the dough.
05 - Press the dough evenly into the prepared pan or dish. Use a fork to poke a few holes in the dough to prevent it from bubbling up.
06 - Bake for 15-18 minutes, or until the dough is lightly golden. Transfer to a wire baking rack to cool for 20 minutes.
07 - While the crust cooks, whisk together the cream cheese, maple syrup or honey (or powdered sugar), vanilla extract, and a pinch of salt until combined.
08 - Spread the frosting evenly on the cooled cookie crust. Sprinkle with fresh fruit and drizzle with honey if desired.
09 - Slice into portions, serve, and enjoy!

# Notes:

01 - Chilling the dough for 10 minutes before pressing it into the pan can make it easier to handle. Wetting your fingers with water prevents sticking.
