01 - 1 package of English muffins
02 - 8 eggs
03 - 1 lb breakfast sausage
04 - 8 oz mild cheddar cheese, thinly sliced

→ Sawmill Gravy

05 - 2 cups milk
06 - ¼ cup sausage drippings (add butter if insufficient drippings)
07 - ¼ cup flour
08 - ½ teaspoon salt, or to taste
09 - ¼ teaspoon pepper, or to taste

# Instructions:

01 - Cook breakfast sausage in a cast iron pan until well done. Remove sausage from the pan and discard all but ¼ cup of fat.
02 - Add flour to the reserved sausage drippings in the skillet. Cook and stir the mixture over medium heat for 5 to 10 minutes, or until it starts turning golden.
03 - Slowly add milk to the roux, stirring constantly. Cook the mixture until it boils and thickens.
04 - Lightly toast the English muffins while preparing the gravy.
05 - Scramble the eggs in a non-stick skillet. Optionally, add a small dash of milk to make them fluffier.
06 - Turn the oven broiler on high. Assemble the pizzas on a baking sheet by spreading sawmill gravy over the toasted English muffins, then topping with scrambled eggs, a slice of cheese, and sausage.
07 - Place the assembled pizzas under the broiler until the cheese is bubbly and melted.
