Easy Mango Salsa Chicken (Print Version)

# Ingredients:

→ For the Chicken

01 - 4 boneless, skinless chicken breasts (1.5 to 2 pounds)
02 - 2 tablespoons olive oil
03 - 1 teaspoon sea salt
04 - 1 teaspoon garlic powder
05 - 1 teaspoon chili powder
06 - ½ teaspoon ground cumin
07 - ½ teaspoon smoked paprika
08 - 1 teaspoon cracked black pepper
09 - ½ teaspoon dried oregano

→ For the Mango Salsa

10 - 2 ripe mangoes, diced (approximately 3 cups)
11 - 1 red bell pepper, diced
12 - 1 jalapeño pepper, seeded and minced (optional)
13 - ½ cup finely chopped red onion
14 - ¼ cup freshly chopped cilantro
15 - Juice of 1 lime
16 - 1 teaspoon lime zest
17 - ¼ teaspoon sea salt

# Instructions:

01 - Preheat oven to 425°F (218°C). Place chicken breasts in a baking dish or on a rimmed baking sheet. Pound chicken to an even thickness of about 1 inch. Brush both sides with olive oil. In a small bowl, mix sea salt, garlic powder, chili powder, cumin, smoked paprika, black pepper, and oregano. Sprinkle seasoning evenly over both sides of the chicken.
02 - Bake in the preheated oven for 17 to 22 minutes, or until internal temperature reaches 165°F (74°C). For a crispier exterior, broil for the last 2 minutes, watching closely. Remove from oven and let rest for 5 minutes before serving.
03 - In a mixing bowl, combine diced mangoes, red bell pepper, jalapeño (if using), red onion, cilantro, lime juice, lime zest, and sea salt. Gently toss until well combined. Adjust seasoning to taste, if desired.
04 - Place baked chicken breasts on a serving platter or individual plates. Spoon mango salsa generously over the top. Optionally, serve chicken and salsa separately to allow guests to customize their portions. Garnish with additional chopped cilantro or lime wedges, if desired.
