# Ingredients:

01 - 900g chicken breast, cut into bite-sized pieces

→ Vegetables & Fruits

02 - 1 bell pepper, sliced
03 - 1 red onion, sliced
04 - 2 cups fresh pineapple chunks

→ Sauce

05 - 2 tablespoons soy sauce
06 - 2 tablespoons olive oil
07 - 1 teaspoon minced garlic
08 - Salt and pepper to taste

→ For Serving

09 - Cooked rice
10 - Chopped green onions, for garnish
11 - Sesame seeds, for garnish

# Instructions:

01 - Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.
02 - In a large bowl, combine the chicken pieces, bell pepper slices, red onion slices, and pineapple chunks.
03 - In a small bowl, whisk together the soy sauce, olive oil, minced garlic, salt, and pepper.
04 - Pour the sauce over the chicken mixture and toss until everything is evenly coated.
05 - Spread the mixture in a single layer on the prepared baking sheet.
06 - Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
07 - Remove from the oven and garnish with chopped green onions and sesame seeds.
08 - Serve over cooked rice while hot.
