Garlic Parmesan Chicken Potatoes (Print Version)

# Ingredients:

01 - 1.5 lbs boneless chicken thighs or breasts, cut into chunks
02 - 1 lb baby potatoes, halved
03 - 2 tbsp olive oil
04 - 4 cloves garlic, minced
05 - ½ cup chicken broth
06 - ½ cup heavy cream
07 - ⅓ cup grated Parmesan cheese
08 - 1 tsp Italian seasoning
09 - ½ tsp paprika
10 - Salt and pepper, to taste
11 - Fresh parsley, chopped (for garnish)

# Instructions:

01 - Season chicken with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown, approximately 4–5 minutes on each side. Remove and set aside.
02 - Using the same skillet, add baby potatoes and minced garlic. Sauté for 2–3 minutes. Pour in chicken broth, cover, and simmer on medium heat for 10–12 minutes or until potatoes are tender.
03 - Stir in heavy cream, grated Parmesan, and Italian seasoning. Simmer for 3–4 minutes until the sauce slightly thickens.
04 - Return the seared chicken to the skillet. Simmer all ingredients together for an additional 5 minutes. Adjust seasoning to taste.
05 - Garnish with freshly chopped parsley and serve the dish warm.

# Notes:

01 - For a crispier texture, finish the dish under a broiler for 2–3 minutes.
02 - Add spinach or mushrooms to incorporate extra vegetables.
03 - Swap heavy cream with Greek yogurt for a lighter alternative.
