Crystal Lagoon Gummy Bears (Print Version)

# Ingredients:

→ Gummy Bear Ingredients

01 - 1 cup white grape juice (preferably clear for transparency)
02 - 3 tablespoons unflavored gelatin (use agar-agar for a vegan option)
03 - 1/4 cup honey or light corn syrup (adds sweetness and shine)
04 - 1/2 teaspoon citric acid (optional for a tangy twist)
05 - Blue food coloring (for the lagoon hue)
06 - 1/4 teaspoon edible shimmer dust (to give it sparkle)
07 - 1/2 cup tonic water (optional for blacklight glow)

# Instructions:

01 - In a small saucepan, combine the white grape juice and sprinkle the gelatin evenly over the surface. Allow it to sit for 5 minutes so the gelatin can bloom. Heat the mixture on low, stirring continuously, until the gelatin dissolves completely. Then, mix in the honey (or corn syrup) and citric acid, ensuring everything is smooth. Add several drops of blue food coloring, stirring until you achieve a bright lagoon-blue shade. If using tonic water for a glowing effect, stir it in at the end.
02 - Lightly coat your gummy bear mold or silicone tray with a thin layer of oil to prevent sticking. Carefully pour the gelatin mixture into the molds. Gently tap the mold on the counter to remove any air bubbles. Place in the refrigerator for at least 1 hour, or until fully set.
03 - Once the gummy bears have set, gently pop them out of the molds. Use a small brush or your fingertips to dust them with edible shimmer powder for a sparkling, water-like appearance.
04 - Store your gummy bears in an airtight container at room temperature, and enjoy their luminous beauty anytime over the next week!
