Chocolate Stuffed Churro Pancakes (Print Version)

# Ingredients:

→ Pancakes

01 - 1 ½ cups self-raising flour
02 - 1 heaped teaspoon baking powder
03 - 2 tablespoons sugar
04 - ½ teaspoon ground cinnamon
05 - ⅓ teaspoon salt
06 - ¼ cup butter, melted and cooled slightly
07 - 1 large egg
08 - 2 teaspoons pure vanilla extract
09 - 1 ¼ cup milk
10 - ½ cup chocolate chips or buttons

→ Cinnamon Sugar Coating

11 - 4 tablespoons sugar
12 - 1 teaspoon ground cinnamon

# Instructions:

01 - Combine flour, baking powder, sugar, cinnamon, and salt in a large bowl. Create a well in the center.
02 - Add melted butter, egg, vanilla, and milk into the well. Slowly whisk until smooth. Set aside.
03 - Melt a small amount of butter in a nonstick pan over low-medium heat. Pour less than ¼ cup of batter onto the pan and spread gently with a ladle.
04 - Drop chocolate chips or buttons onto the center of the batter and pour a small amount of batter over the top to cover completely.
05 - Cook until the underside is golden, then gently flip and cook until the other side is golden. Repeat with remaining batter and chocolate chips.
06 - Mix cinnamon and sugar in a shallow dish. Once the pancakes are warm, place each pancake in the mixture to coat both sides evenly.
07 - Serve pancakes with fruit, ice cream, frozen yogurt, or enjoy as they are.
