Whisk olive oil, lime juice, garlic, chipotle powder or adobo sauce, smoked paprika, ground cumin, salt, and black pepper in a bowl. Thoroughly coat the chicken and allow to marinate for at least 30 minutes or overnight for enhanced flavor.

Heat a grill or grill pan over medium-high heat. Grill the chicken until golden with char marks and fully cooked to an internal temperature of 165°F. Rest the chicken for 5 minutes before slicing thinly.

In a blender, mix ranch dressing, chipotle peppers, lime juice, garlic powder, and salt. Blend until smooth and creamy. Adjust spice or salt to taste.

Warm tortillas on a skillet or in the microwave. Add a scoop of rice, grilled chicken, tomatoes, onion, cilantro, shredded cheese, lettuce or spinach, avocado or guacamole, and a generous drizzle of chipotle ranch sauce. Wrap tightly and serve warm.
