Chicken Alfredo Roll Ups (Print Version)

# Ingredients:

01 - 8 lasagna noodles
02 - 2 cups Alfredo sauce, divided
03 - 1 lb cooked shredded chicken
04 - 1 teaspoon garlic powder
05 - 1 teaspoon Italian seasoning
06 - Salt and pepper to taste
07 - 3 cups freshly grated Mozzarella cheese, divided
08 - Chopped parsley, optional

# Instructions:

01 - Preheat oven to 375 degrees F. Spray a 9×13-inch baking dish with non-stick spray and set aside.
02 - Boil lasagna noodles in a large pot of water according to package directions. Drain water and lay out cooked lasagna noodles onto parchment paper to cool and dry.
03 - In a medium bowl, stir together half the Alfredo sauce, shredded chicken, garlic powder, Italian seasoning, salt, pepper, and 1 cup of mozzarella cheese. Mix to combine.
04 - Divide the chicken Alfredo mixture evenly among the 8 lasagna noodles, spreading it over each noodle. Roll up noodles starting at one end and roll over the toppings. Place the roll-ups in the pan, seam-side down.
05 - Pour the remaining Alfredo sauce evenly over the top of each roll-up. Top evenly with the remaining mozzarella cheese.
06 - Bake uncovered for 20 minutes or until the cheese is melted and bubbly. Top with chopped parsley, if desired.
07 - Serve warm and enjoy!

01 - You can substitute freshly grated mozzarella with a pre-shredded option for convenience.
