Cheesy Stuffed Mozzarella Rings (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 large onions (yellow or sweet)
02 - 1 cup shredded mozzarella cheese or string cheese cut into pieces
03 - 1/4 cup all-purpose flour
04 - 2 large eggs, beaten
05 - 1 cup breadcrumbs (panko breadcrumbs recommended)
06 - 1 teaspoon garlic powder
07 - 1 teaspoon paprika
08 - Salt and pepper, to taste
09 - Vegetable oil for frying

# Instructions:

01 - Peel the onions and cut them into 1/2-inch thick rings. Separate the rings carefully, keeping the largest ones intact for stuffing. Set aside the smaller rings for later use or discard them.
02 - Take the larger onion rings and stuff the center with shredded mozzarella cheese or small pieces of string cheese. Gently press the cheese to ensure it is securely enclosed within the ring.
03 - In one shallow bowl, place the flour. In another shallow bowl, beat the eggs. In a third shallow bowl, combine the breadcrumbs, garlic powder, paprika, salt, and pepper.
04 - Dip each stuffed onion ring first into the flour, ensuring it’s lightly coated. Then dip it into the beaten eggs, followed by the breadcrumb mixture, pressing gently so the breadcrumbs adhere well.
05 - Heat vegetable oil in a deep frying pan or large skillet over medium-high heat (about 175°C or 350°F). Once the oil is hot, place the breaded onion rings into the oil a few at a time, avoiding overcrowding. Fry for 2-3 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on a paper towel-lined plate.
06 - Serve the cheesy stuffed mozzarella onion rings hot and gooey. They pair well with dipping sauces such as marinara, ranch, or garlic butter.

# Notes:

01 - For a spicy variation, add cayenne pepper or red pepper flakes to the breadcrumb mixture.
02 - You can use cheddar, provolone, or a mix of cheeses for a unique flavor profile.
03 - Make-ahead tip: Breaded onion rings can be prepped and stored in the fridge for up to 1 hour before frying.
04 - For a healthier option, bake at 200°C (400°F) for 15-20 minutes, flipping halfway.
