Cheesecake Egg Rolls Delight (Print Version)

# Ingredients:

→ Egg Rolls

01 - 8 oz cream cheese
02 - 3 ½ tablespoons sugar
03 - ½ teaspoon lemon juice
04 - ½ teaspoon vanilla extract
05 - ¼ teaspoon salt
06 - Egg roll wrappers
07 - Water for brushing wrappers

→ Topping

08 - 1 cup sugar
09 - 2 tablespoons cinnamon
10 - Oil for frying
11 - Caramel, chocolate, chopped strawberries, or powdered sugar for serving

# Instructions:

01 - Preheat 2 inches of oil in a large stockpot over medium heat to 375°F.
02 - In the bowl of a stand mixer fitted with a paddle attachment, add cream cheese, sugar, lemon juice, vanilla, and salt. Beat on high speed for 1-2 minutes, stopping a few times to scrape down the sides of the bowl.
03 - Place the egg roll wrapper on your work space with one corner facing you. Spoon 2 tablespoons of filling into the wrapper. Bring the bottom corner up over the filling, then fold the outer corners towards the middle like an envelope. Brush the top corner of the wrapper with water and roll up to seal. Set the finished egg roll on a plate and repeat the process with the remaining wrappers.
04 - Add sugar and cinnamon to a small bowl and whisk to combine. Set aside.
05 - Carefully place 4 egg rolls into the heated oil and fry for 2 minutes or until golden and crispy. Once cooked, remove them from the oil and repeat the process with the remaining egg rolls.
06 - Once all the egg rolls are cooked, roll them in the cinnamon sugar mixture.
07 - Serve with a topping of your choice, such as caramel, chocolate, chopped strawberries, or powdered sugar.
