Easy Beef Pasta (Print Version)

# Ingredients:

01 - 1 medium onion, chopped into small pieces.
02 - 1 (1 ounce) pack of taco seasoning.
03 - 3 garlic cloves, finely chopped.
04 - 1 pound of lean ground beef.
05 - 1 tablespoon of olive oil.
06 - 8 ounces (2 ΒΌ cups) of uncooked rotini pasta.
07 - 2 cans (10 ounces each) of red enchilada sauce.
08 - 2 cups of shredded colby jack cheese.
09 - 2 cups of water.

# Instructions:

01 - Heat up the oil and cook the ground beef along with the onion for 5-7 minutes. Stir it around until the beef is cooked thoroughly, then pour away any leftover grease.
02 - Mix in the chopped garlic and taco seasoning. Let it cook for an additional 1-2 minutes until you can really smell it.
03 - Toss in the pasta, water, and enchilada sauce. Bring it all to a boil, then lower the heat. Cover the pan and let it simmer for 10-15 minutes.
04 - Once done, take the pan off the heat. Stir in the shredded cheese and then serve it nice and warm.

# Notes:

01 - Use lean beef to cut down on greasy drippings.
02 - Store leftovers in the fridge for 3-4 days.
03 - You can freeze this dish for up to three months.
