Heat olive oil in a large skillet over medium heat. Cook onions until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Mix thoroughly and cook until heated through, about 2-3 minutes.

In a medium bowl, combine butter, garlic, and parsley. Microwave until melted.

Lay 12 slices of bread on a work surface. Spread the melted butter mixture over each piece. Turn the bread slices over and place 6 slices of cheese on 6 pieces of bread. Divide the BBQ chicken mixture evenly over the cheese. Top the chicken with the remaining cheese slices and close the sandwiches with the remaining bread slices, buttered side facing out.

Place the assembled sandwiches in a large non-stick skillet over medium heat. Cook until the bottoms of the sandwiches are browned, about 3-5 minutes. Flip the sandwiches, reduce heat to medium-low, and continue cooking until the other side is browned and the cheese is melted, about 3-5 minutes more.
