Authentic Greek Chicken Gyros (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1.5 lbs (680g) boneless, skinless chicken thighs
02 - 3 tbsp extra virgin olive oil
03 - 3 cloves garlic, minced
04 - 1 tbsp dried oregano
05 - 1 tsp smoked paprika
06 - 1 tsp ground cumin
07 - Salt and pepper, to taste

→ Assembly

08 - 4–6 pita or flatbreads
09 - 1 cucumber, diced
10 - 2 medium tomatoes, diced
11 - 1 red onion, thinly sliced
12 - 1 cup plain Greek yogurt
13 - 1 tbsp lemon juice
14 - Fresh parsley, chopped (for garnish)

# Instructions:

01 - Combine olive oil, minced garlic, oregano, paprika, cumin, salt, and pepper in a bowl. Add chicken thighs and coat thoroughly. Cover and refrigerate for at least 1 hour, preferably overnight.
02 - Mix Greek yogurt with lemon juice in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to use.
03 - Preheat grill or skillet to medium-high heat. Cook marinated chicken for 6–7 minutes per side, or until fully cooked and slightly charred. Rest for 5 minutes before slicing into thin strips.
04 - Warm the pita or flatbreads. Place sliced chicken in the center and top with cucumber, tomatoes, red onion, tzatziki sauce, and parsley.
05 - Fold the pita around the fillings and serve immediately.

# Notes:

01 - Marinate the chicken overnight for best flavor.
02 - Prepare the tzatziki sauce up to a day in advance to save time.
03 - Leftover chicken can be refrigerated in an airtight container for up to 3 days.
