# Ingredients:

01 - 21-ounce can of apple pie filling (or homemade apple pie filling)
02 - 6 (8-inch) flour tortillas
03 - 1 teaspoon ground cinnamon
04 - 1/2 cup unsalted butter
05 - 1/2 cup white sugar
06 - 1/2 cup brown sugar
07 - 1/2 cup water

# Instructions:

01 - Preheat your oven to 175°C (350°F). Lightly grease a 23×33 cm (9×13-inch) baking dish with non-stick spray or butter.
02 - Lay out the flour tortillas on a clean surface. Spoon about 1/3 cup of apple pie filling onto the center of each tortilla. Sprinkle a pinch of ground cinnamon over the filling.
03 - Fold the sides of the tortillas over the filling, then roll them tightly from the bottom to create cylinders. Place the rolled tortillas seam-side down in the prepared baking dish.
04 - Melt the butter in a medium saucepan over medium heat. Add the white sugar, brown sugar, and water. Stir continuously until the sugars dissolve and the mixture comes to a gentle boil. Remove from heat.
05 - Pour the warm sugar sauce evenly over the rolled tortillas in the baking dish, ensuring each enchilada is well-coated. Bake in the preheated oven for 20-25 minutes, or until the tortillas are golden brown and the sauce is bubbly.
06 - Remove the dish from the oven and let it cool for 5-10 minutes. Serve warm with an optional topping of vanilla ice cream or a drizzle of caramel sauce.

# Notes:

01 - If the tortillas are stiff, warm them in the microwave for 10-15 seconds to make them more pliable.
02 - For extra crispiness, broil the enchiladas for 1-2 minutes at the end of baking.
