Preheat oven to 400°F and grease a baking sheet with nonstick cooking spray.

In a medium bowl, whisk together the flour, baking powder, kosher salt, and cinnamon.

In a large bowl, whisk together the melted butter and sugar until combined. Add the egg, vanilla extract, and applesauce, whisking until smooth.

Add the dry ingredients to the wet ingredients and stir just until combined. Gently fold in the diced apples.

Scoop out 1 tablespoon portions of batter and drop them a few inches apart onto the prepared baking sheet.

Bake for 10 minutes, then remove from oven and set the broiler to high.

Whisk together the powdered sugar and apple cider or juice until thin and pourable.

Brush some of the glaze over the warm fritter bites, allowing it to drip down the sides. Broil for 2-4 minutes, rotating the pan frequently, until the glaze begins to caramelize and bubble.

Remove from the oven and brush the remaining glaze evenly over the tops of the fritters.

Let the fritters sit for 15 minutes to allow the glaze to set before serving.
